This is one of those tried and true recipes that everyone needs to have on hand in their kitchen. My mom has been making these muffins for years and so many memories revolve around them for me. They were the muffins that everyone at school would want her to bring in and the muffins that we would take to loved ones houses, bake before road trips, they were great for everything really! As I'm writing this I have all of the ingredients waiting for me on my counter to make another batch to have this week! They are just so good and so good for you too which to me makes all the difference. They are filled with healthy fats and energizing superfoods that will keep you satisfied whether you are grabbing 1 or 2 for breakfast, a snack, or even dessert! Quick note: We usually make a whole batch and keep them in a ziplock bag in the fridge throughout the week! You can either eat them chilled or stick them in the microwave or oven to warm them back up. I usually warm mine up for 25 seconds and it's perfect!
